Job Summary
The Beverage Manager leads the strategic direction, development, and execution of all beverage operations across the resort. All beverage programs and operations are managed in line with Rosewood brand standards, hotel standards, and the service expectations of an ultra luxury environment. A consistent focus is maintained on product quality, innovation, operational excellence, and financial performance. Ownership is demonstrated in shaping and maintaining a distinctive beverage identity across the resort, ensuring all offerings are relevant, progressive, and aligned with international industry benchmarks, including leading global bar standards. A strong operational presence is maintained across all beverage areas, with close coordination with the Food and Beverage leadership team, Culinary, and other hotel departments, ensuring alignment in service delivery, concept execution, and guest experience. Accountability includes consistency of execution, development of beverage programs and concepts, support of revenue performance, and the continuous development of teams, knowledge, and operational standards across all beverage operations.
Essential Duties and Responsibilities
Quality:
- Maintain all beverage operations in line with Rosewood brand standards, Forbes standards, and LQA requirements.
- Maintain consistency of product quality, presentation, and service rituals across all beverage service areas.
- Drive execution of beverage standards through regular operational presence and follow-up.
- Align beverage programs with international best practices and industry benchmarks, including leading global bar standards.
- Maintain visibility across operations during peak service periods and key operational hours.
- Engage with guests to ensure a refined, knowledgeable, and personalized beverage experience.
- Oversee development and execution of cocktail programs, wine lists, and beverage menus across all outlets.
- Maintain relevance, creativity, and consistency of all beverage offerings.
- Conduct regular quality reviews of cocktails, wines, spirits, coffee, and non-alcoholic programs.
- Ensure proper handling, storage, and presentation of all beverage products.
- Maintain standards of bar setup, mise en place, glassware, equipment, and overall presentation across all areas.
- Maintain high standards of technical skill, product knowledge, and service delivery across all bartenders and baristas through structured and continuous training.
- Develop and oversee training programs covering cocktails, coffee, spirits, wine, and non-alcoholic beverage preparation and service.
- Maintain consistency in preparation techniques, recipes, and service rituals across all beverage categories.
- Ensure strong product knowledge and service confidence across all beverage associates.
- Support the development and delivery of beverage-related guest experiences, including cocktail classes, tastings, and interactive programs.
- Ensure all guest-facing beverage experiences are aligned with the positioning of the resort and delivered to a high level of refinement.
- Arrange guest bartender collaborations and visiting mixologist programs to support knowledge exchange and brand positioning.
- Work with key beverage brands to develop strategic partnerships that enhance quality, visibility, and guest experience.
- Support the development and execution of beverage promotions, activations, and seasonal initiatives.
- Organize and oversee beverage-focused events and programs that strengthen the resort’s positioning and guest engagement.
- Encourage knowledge sharing and continuous skill development within the beverage teams.
- Maintain alignment between training programs and operational standards to ensure consistency across all areas.
- Maintain alignment between beverage and culinary offerings through regular coordination with Culinary.
- Maintain effective communication with the Director of Food and Beverage on all beverage-related matters.
Financial:
- Maintain awareness of beverage revenue performance across all operations.
- Monitor daily sales, cost of sales, and overall profitability.
- Maintain effective pricing structures across all beverage menus.
- Maintain beverage cost in line with approved targets through effective control and follow-up.
- Control beverage costs through purchasing practices, inventory management, and stock rotation.
- Monitor wastage, spillage, and shrinkage and take corrective action where required.
- Identify opportunities to improve profitability through menu engineering and product selection.
- Maintain control of beverage inventories, including wines, spirits, and specialty items.
- Work in coordination with Finance, Purchasing, and Culinary on cost control and reporting.
- Liaise with Cost Control to review and monitor beverage cost performance on a weekly basis and ensure timely corrective action.
- Conduct regular market and competitor surveys within the competitive set to ensure pricing remains relevant and competitive.
- Maintain oversight of beverage pricing across all systems, ensuring accuracy, consistency, and alignment with approved strategies.
- Ensure integrity of pricing, item setup, and revenue capture within operational systems (Micros and related platforms).
- Review financial variances on a regular basis and implement corrective actions where required.
- Explore and evaluate suppliers, products, and sourcing options to support quality, consistency, and cost efficiency.
- Support the negotiation and management of supplier agreements, contracts, and pricing structures.
- Establish and maintain strategic supplier relationships and brand collaborations where relevant.
- Identify opportunities for partnerships, activations, and collaborations that support revenue generation and brand positioning.
- Drive revenue awareness and upselling practices across all beverage teams.
- Support development of premium beverage offerings and experiences.
- Ensure efficient use of resources across all beverage operations.
Leading:
- Provide direction and support to beverage managers, supervisors, and associates.
- Maintain a strong beverage culture across the resort, focused on quality, knowledge, and innovation.
- Ensure high standards of technical skill and service delivery across all beverage teams.
- Develop and maintain structured training programs covering cocktails, spirits, wine, and service rituals.
- Support recruitment and selection of beverage associates in coordination with Talent and Culture.
- Identify and develop high-potential talent within the beverage teams.
- Maintain grooming, behavior, and professional standards across all beverage operations.
- Conduct regular training sessions, tastings, and knowledge development initiatives.
- Maintain a culture of continuous learning and operational improvement.
- Support performance management, coaching, and development of managers and supervisors.
- Lead by example through visible presence, professionalism, and engagement.
- Encourage creativity and innovation within beverage program development.
- Support preparation of teams and concepts for external benchmarking and recognition where relevant.
