Job Summary
The Bartender is responsible for delivering exceptional beverage service in line with Rosewood brand standards and the expectations of an ultra-luxury environment. A strong presence is maintained behind the bar throughout all service periods, ensuring beverage quality, consistency, efficiency, and personalized guest engagement. The role requires strong knowledge of cocktails, wines, spirits, and other beverage offerings while maintaining the highest standards of presentation, cleanliness, and organization. Accountability includes guest satisfaction, beverage quality, operational efficiency, stock control, and maintaining professional service standards.
Essential Duties and Responsibilities
Quality:
- Maintain bar operations in line with Rosewood brand standards, Forbes standards, and LQA requirements.
- Prepare and serve beverages according to established recipes, presentation standards, and service procedures.
- Maintain consistency in beverage quality, taste, presentation, and service throughout all service periods.
- Maintain a strong operational presence behind the bar while engaging confidently and professionally with guests.
- Ensure all beverages are prepared accurately, efficiently, and within established service timelines.
- Demonstrate thorough knowledge of all beverage offerings.
- Recommend beverages confidently based on guest preferences and dining occasions.
- Comply with all licensing regulations and hotel policies.
- Engage with guests to create memorable and personalized experiences through professional interaction.
- Handle guest requests, complaints, and service recovery with professionalism and ownership.
- Ensure guest allergies, dietary requirements, and special beverage requests are understood and followed.
- Conduct daily mise-en-place and ensure the bar is fully stocked and operational before service.
- Maintain cleanliness and organization of all bar areas, equipment, glassware, and workstations.
- Ensure menus, beverage lists, wine lists, and promotional materials remain accurate and presentable.
- Maintain proper storage and handling of all beverages following hotel and HACCP standards.
- Support VIP amenities, special events, celebrations, and bespoke cocktail requests.
- Ensure bar equipment is maintained in excellent working conditions and report maintenance requirements promptly.
Financial:
- Maintain awareness of daily beverage sales, average check, and outlet performance.
- Support achievement of beverage revenue and profitability targets.
- Maximize sales through confident upselling of premium spirits, wines, champagnes, and signature cocktails.
- Ensure accurate order taking, billing, and posting within operational systems.
- Maintain integrity of beverage pricing and menu availability within operational systems.
- Minimize beverage wastage through proper preparation, portion control, and stock rotation.
- Maintain awareness of beverage cost and contribute to cost control initiatives.
- Participate in the weekly and monthly inventory counts as required.
- Ensure proper handling, storage, and rotation of stock according to FIFO/LILO principles.
- Support implementation of beverage promotions and seasonal offerings.
- Report stock shortages, breakages, and discrepancies promptly.
- Ensure cash handling procedures and financial controls are consistently followed.
Leading:
- Maintain professional grooming, appearance, and behavior always.
- Participate actively in daily briefings and training sessions.
- Support onboarding and training of new bartenders and beverage associates.
- Share beverage knowledge and best practices with colleagues to promote continuous improvement.
- Maintain effective communication with service associates, supervisors, culinary, and stewarding teams.
- Demonstrate teamwork by supporting colleagues during busy service periods.
- Maintain a positive, respectful, and professional working environment.
- Lead by example through professionalism, efficiency, and exceptional guest engagement.
- Maintain consistency in service standards and operational discipline throughout each shift.
- Support continuous learning through participation in beverage tastings, product knowledge sessions, and cocktail development initiatives.
